When I think about my weekend at the Hotel Principe in Forte dei Marmi, I think about how much this structure represents the yin and yang energies.
I think about the contrast between antique and modern. The historical presence of the “Principe” Hotel (the Prince) in Forte dei Marmi melts with the traditions of the city. The structure is antique, just like the kindness of its staff. However, it is also modern, as the hotel itself has been recently renovated; its design and architecture are elegant and sober at the same time.
Another detail of this hotel that deserves a special mention is its orientation. At sunrise, indeed, the backside of the hotel overlooks the Apuan Alps, offering a breathtaking view over the mountains as well as a generous vegetation made of holm oaks, myrtles, phillyrea, olive trees, and maritime pine. In order to enjoy the sunset you need to walk to the opposite side of the hotel; you will find yourself at the “67, Sky Lounge Bar” (open also to the public) where you will enjoy a breathtaking sunset that paints the colors of Versilia.
For what it comes to food and culinary experiences, guests who are staying at the Hotel Principe Forte dei Marmi have nothing to worry about. The hotel restaurant offers extraordinary excellence and quality thanks to the skills and knowledge of Valentino Cassanelli; a young and talented chef who has been working in London, Milan, and Venice and who has been working with nationally and internationally famous chefs.

We have the chance to taste some of Valentino Cassanelli’s delicacies as we enjoy our experience at the Lux Lucisrestaurant. The chef nourishes a strong passion for art and photography; each dish is indeed a well curated mix of flavors and visual pleasures. Lux Lucis is not the only restaurant linked to the hotel: visitors can also enjoy the menu of the Bagno Dalmazia restaurant (located just one block away from the hotel), where each dish is prepared with fresh and unique local ingredients.
During our interview with Valentino Cassanelli, the chef tells us about his story and dreams. He has always known that he would have become a chef; he had no hesitations about his choice since he was just a little boy. Cooking has always been his favorite way to express his artistic and creative nature. Valentino is a real gentleman and he tells us about the importance of his staff of young professionals. The result of his work comes from the efforts of his staff; each person represents a single ingredient and the combination of their skills creates unique results. His international background has shaped his work by adding unique characteristics. His cuisine is indeed the result of the combination of different influences.
His cuisine is extraordinary. A visual and flavor experience where the cooking of the ingredients doesn’t implicate a radical distortion of their characteristics; it is rather a sober and rational food transformation.
